Perfectly balanced espresso

Made on an ECM Synchronika II, single shot, 18.3g ground with 6s pre-infusion, first drop at 10s, yield at 30g in 27s. We're super-sensitive to sourness, and this bean gives none. bitterness is pleasant and balanced with hints of chocolate, walnut and vanilla. Beans are good through 10 days from roast date. Currently our favorite espresso bean.
