Grown high in the mountains of Boquete, Panama, this remarkable coffee showcases everything coffee lovers have come to expect from an exceptional geisha varietal: vibrant fruit, elegant florals, and remarkable sweetness balanced by a delicate, tea-like body. In the cup, you'll discover notes of black currant, ripe papaya, and fragrant rose, creating a coffee that's both expressive and refined.

Hacienda Don Julian is owned and operated by Heakyung Kang Burneskis, a Korean American coffee producer. She co-founded Hacienda Don Julian with her husband, Dr. Richard D. Burneskis. Following his passing in 2004, Heakyung has continued to lead the farm with dedication, preserving their shared vision while producing exceptional coffee.

Established in 1999, Hacienda Don Julian is located in the world-renowned coffee-growing region of Boquete, Panama, where elevations range from 1,600 to 2,000 meters above sea level. The higher the elevation the coffee plants grow, the sweeter and rarer the coffee tends to be. Spanning 41 hectares, the farm has earned recognition as one of the most beautiful coffee farms in the world, not only because of its stunning landscape, but because of its dedication to preserving the surrounding environment.

The combination of towering elevations, cool mountain temperatures, volcanic soils, and careful farming practices creates ideal conditions for growing exceptional specialty coffee. Coffee cherries mature more slowly at these elevations, allowing them additional time to develop sugars and organic acids that eventually translate into greater sweetness, complexity, and clarity in the cup. The industry standard suggests that the harder it is for the coffee plant to grow, the better the coffee will taste.

Exceptional coffee doesn't stop at harvest
Every coffee cherry at Hacienda Don Julian is harvested carefully by hand, ensuring only properly ripened fruit is selected. Once picked, the coffee begins a meticulous drying process designed to preserve and enhance its natural sweetness.

The freshly harvested coffee is first dried on traditional raised African drying beds, allowing airflow to circulate evenly around every cherry. After several days under direct sunlight, the coffee is transferred into shaded greenhouses where the drying process continues much more gradually. This slower approach is exactly what makes all the difference.

Each drying bed is individually labeled with harvest information, allowing every lot to be carefully monitored throughout the process. Rather than rushing the coffee to stability, Hacienda Don Julian allows the coffee to dry slowly for approximately two months inside the greenhouse. This slow drying process reduces stress on the coffee beans while encouraging even moisture loss throughout each cherry. It’s a careful approach that helps preserve delicate aromatics while creating greater sweetness, cleaner fruit notes, and a more balanced final cup.

It's a long process, but it’s one that's immediately noticeable when you taste the finished coffee.

Elegance in a cup

One of the joys of great geisha coffee is discovering layer after layer of flavor as the coffee cools.

Our Panama Hacienda Don Julian Geisha opens with vibrant black currant, bringing a deep berry sweetness that immediately catches your attention. As the cup develops, notes of papaya emerge, adding tropical sweetness and juicy complexity. Throughout the entire experience, delicate aromas of rose provide an elegant floral character that lingers long after each sip.

Together, these tasting notes create a coffee that's bright without being sharp, sweet without becoming heavy, and floral without overpowering the fruit. This balance is one of the defining characteristics that has made Panama geishas some of the most sought-after coffees in the specialty coffee world.

What makes a geisha coffee so special?
The geisha coffee varietal first originated in Ethiopia. From there, it began circulating through Tanzania, then Costa Rica, then across Central America by 1953. Nowadays, the geisha varietal mostly exists in Panama. These types of coffee must grow at higher altitudes. As our CEO and two-time U.S. Barista Champion Heather Perry likes to note, geishas and other high-end varietals like to struggle. "The harsher the conditions are for the coffee plants to grow, the longer it takes for the coffee cherries to ripen. The longer it takes for the cherries to ripen, the more time sugars have to develop within the cherry, making the coffee naturally sweeter, juicier, fruitier," she shares. That's what makes the terroir in Panama ideal—nutrient-rich volcanic soil, extreme altitudes, and several microclimates really allow the coffee cherries to slowly develop and age like fine wine.

Geisha coffees are also often hand-sorted. Growers and pickers will start by picking only the ripest cherries by hand, and once they're hand-picked and hand-sorted, they'll go through the same processing any other coffee can go through. There are natural geishas, honey processed geishas, anaerobic processed geishas, and more! Though this varietal already boasts fruit-forward, tea-like flavor profiles, these processing methods can also add even more complexity and range to their flavors and aromas.

The arduous growth process for geisha coffee, hand-picking and hand-sorting processes, and the complex flavor profiles of the coffees all contribute to its rarity, which then contributes to its specialty and value.

Brewing for the best experience

To fully appreciate the complexity of this coffee, we recommend brewing it as a manual pour over. Methods like the Kalita Wave, Hario V60, or April Brewer allow the coffee's delicate aromatics and layered sweetness to shine.

Using filtered water and allowing the coffee to cool slightly between sips reveals new dimensions of flavor. Many geisha coffees continue evolving as they cool, revealing additional sweetness and complexity that may not be immediately apparent in the first few minutes after brewing.

How should I brew this coffee?

For Pearl Reserve coffees, we recommend the recipe below, designed by Bronze Medalist at the 2023 Brewer's Cup, Daniel Teplitz:

General Recommendations:
1:12.5 ratio
28g coffee ground coarsely
350g water at 202°F
2:15 total brew time
a more detailed brewer such as an April Brewer or a Kalita Brewer

Recipe:
Once coffee is poured into the brewer, start with a pour of 50g of water
Leave this to bloom for 30 seconds
Once it hits 30 seconds, pour 150g more water to bring your total to 200g
Leave this for about 15 seconds
Once it hits 1:15, pour 100g more water to bring your total to 300g
Leave this for about 30 seconds
Once it hits 1:45, pour 50g more water to bring your total to 350g
Once it's done brewing, enjoy!
