July is an important month for us here at Klatch Coffee. Not only does the warm weather remind us that we're more than halfway through the year, but it also reminds us of one of the company’s main pillars, Heather Perry. If you’re new to Klatch Coffee, Heather is the eldest daughter of our Founder, Green Sourcer, and Roastmaster, Mike Perry. Not only that, she’s also a two-time U.S. Barista Champion—the first woman to ever win this title, and the first person to ever win the title twice. Most importantly, however, she is our CEO, and a great one at that. So, circling back to the beginning. Why is July important to us? Well, it’s Heather’s birthday month!
Heather's influence extends far beyond the competition stage. Her pursuit of excellence has helped shape the way we source, roast, and prepare coffee every day. Whether she's dialing in an espresso recipe, cupping new coffees, or encouraging our baristas to keep learning and keep experimenting, she's always looking for ways to make each cup just a little bit better. After all, one of Heather's personal mottos is that "fine" is the f-word. “We never settle for ‘fine,’” she says. “‘I hate it’ is easy to fix because we know we need something completely different, and ‘I love it’ is great because we’ve gotten to the right place, but saying something is fine means it wasn’t good enough to love.” That spirit of curiosity and continuous improvement is woven into everything we do, making July the perfect time to celebrate not only Heather, but the values she brings to Klatch Coffee every day.
With Heather at the forefront of our thoughts, Julys at Klatch Coffee are built around her favorites. Our current pour over Bru Bar menu in our store locations features Lion’s Pride, her favorite blend of all time, and one she literally has a subscription to so she never runs out at home. Our espresso of the month that’s being used in our store locations is our WBC World’s Best Espresso, which won Best Espresso during Heather’s competition run in 2007 at the World Barista Championship in Tokyo, Japan. And rounding out our collection, Heather’s favorite drink, the Whipped Piña Colada, is returning as our Coffee Curious beverage for the month!
What is Coffee Curious?
Coffee Curious is a signature drink menu crafted for those who sip differently. Each month, when we rotate our Bru Bar pour over selection, we also change out this signature drink. Creating one signature drink each month to complement our seasonal offerings, Bru Bar selection, and regular menu lets our creativity shine while giving the team an opportunity to experiment with new recipes and flavor combinations. It’s our way of sharing our love of coffee, with a little something special. To us, it exemplifies everything we believe in at Klatch Coffee: meeting people wherever they are in their coffee journey, and always innovating, learning, and trying new things. There’s no shame in enjoying a fancy flavored coffee, and it doesn’t make you any less of a coffee drinker to do so! We love our espressos and pour overs, but sometimes, a little sweet treat just hits different. We also believe that coffee is never finished. We love experimental processes, we love unique roasts and coffees, and we’re always curious and searching for ways to enhance those flavors and create something exciting!
Why a Piña Colada?
There are few drinks Heather loves more than coffee. She enjoys a good Paloma during Sunday Brunch, the Sláinte in June, and a classic Americano or Cold Brew on any regular day. But, if she's on vacation, you'll probably find a Piña Colada in her hand. Bright, tropical, and just a little indulgent, it's become one of her favorite ways to relax. "Coffee is great while you're on vacation," Heather shared with a laugh, "but a Piña Colada is even better." Naturally, we couldn't resist asking ourselves: what if we combined the two?
What is the Whipped Piña Colada?
The Whipped Piña Colada is made with pineapple juice, coconut milk, chilled espresso, Crazy Goat cold brew concentrate, and our house-made vanilla syrup. You read that right—there are two types of coffee within this drink. We actually launched this drink for the first time in 2025, and the feedback was that the coffee was too light, and the drink just tasted like a regular Piña Colada. While we also love a good solid Piña Colada, our goal was to fuse it with coffee and make a stellar drink that let both the coffee and the tropical beverage shine. Thus, it was back to the R&D lab.
This year, we’re re-releasing the drink with some upgrades and tweaks to the recipe. Using both the chilled WBC World’s Best Espresso and the Crazy Goat cold brew concentrate we make not only enhances the coffee-forward flavor of the drink, but it also adds an extra bit of caffeine you need to get through these long summer days. The citrusy, fruitiness of the WBC World’s Best Espresso pairs wonderfully with the dark chocolate tones of the Crazy Goat, and creates an added depth to the flavor that wasn’t there before. Then, we made this combination into a foam to float atop our pineapple juice and coconut milk mixture. The whipped foam added richness, texture, and a more pronounced coffee flavor without overpowering the tropical base.
We know it can sound quite unconventional, but we're all about trying unique things here. The bright espresso naturally complements the pineapple juice, making the pineapple taste fresher and more vibrant. The chocolatey tones of the cold brew went perfectly with the coconut, reminiscent of a dessert. Whipped into a thick and creamy espresso foam, this combination then added an additional textural aspect. As you sip, you're first welcomed by the creamy, subtly sweet coffee, followed by the familiar taste of a fruity cocktail.
It's refreshing, indulgent, and unmistakably coffee-forward—a drink that proves tropical cocktails and specialty coffee can be the perfect match.
