Nicaragua Orange Co-Fermentation: A Tribute to Klatch Coffee’s Dutch Heritage
Some coffees tell a story through their origin, some coffees tell their story through the people that grow them or the tasting notes they carry. With Klatch Coffee’s latest special release, the Nicaragua Orange Co-Fermentation, we’re bringing all of these pieces together to create something that tells a unique story: the story of Klatch Coffee’s heritage.
As a family-founded business, an important part of what we do is tell the story of the Perry Family. Originally from the Netherlands, this coffee is an expression of where we come from, and how those roots continue to shape who we are today. Every detail, from the coffee itself to its distinctive packaging, was thoughtfully chosen to honor that connection.
A Color That Carries a Legacy
At the heart of this release is “orange.” It’s a color that is deeply woven into Dutch history and national identity, tracing back to the House of Orange-Nassau, the Dutch royal family, and William of Orange, a central figure in the Netherlands’ struggle for independence. Over generations, orange became a powerful symbol of Dutch heritage, national pride, and celebration. For our founding family, bringing orange into this coffee’s identity is a way to acknowledge the traditions that came before us while creating something entirely our own.
The coffee arrives in a striking orange burlap bag, an unmistakable expression of the color at the center of this release. Wrapped around it is a Dutch-inspired design in classic white and blue, drawing on a visual that feels both timeless and distinctly connected to the Netherlands. The result is packaging that does more than stand out on a shelf and serve as a unique sustainable option. The packaging itself is a reflection of a meaningful piece of our history.
The release also includes a coordinating white-and-blue tumbler, extending the design beyond the bag and inviting coffee lovers to carry a piece of the story into their everyday routines! Together, the packaging and tumbler, (MiiR 16oz: Sipper Straw Bottle) create a collection that feels intentional, personal, and rooted in our heritage.
A Coffee Worth Celebrating
Of course, a story about coffee must include what you’re drinking and enjoying as well. The Nicaragua Orange Co-Fermentation is a medium-light roast made sourced from a Direct Trade partnership with Finca Idealista, part of the Nicaraguan farming group Gold Mountain Coffee Growers. This partnership reflects our commitment to sourcing distinctive coffees and building meaningful relationships with the people responsible for producing them.
In the cup, the coffee offers a lively profile. Naval orange leads with a bright, citrus-forward character, complemented by the lively tartness and slight bitterness of kumquat. Raw sugar brings a natural sweetness that rounds out the citrus, while clove adds a subtle, warming spice. Together, these notes create a profile that is expressive with a gentle depth. The orange character of the coffee makes the choice of color feel especially fitting, creating a natural connection between the sensory experience and the visual identity.
Exploring Co-Fermentation
What makes this coffee particularly distinctive is its co-fermentation process. As producers continue to experiment with different processing methods to bring additional flavors and options to their coffee, co-fermentation is one that’s rising in popularity. Co-fermentation is a process where fruits, spices, herbs, or yeast are added alongside the green coffee beans into a sealed tank before the drying process. No flavoring oils are added to the coffee post-roast, and nothing is roasted alongside the coffee. The only additive in the co-fermenting process is whatever fruit or fruit juice the producers add into the chamber alongside the coffee cherries, to soak in some of the flavor.
While regular flavor notes describe what you naturally taste from the coffee itself, co-fermented coffees involve an intentional step during processing to influence flavor. In traditional coffees, notes like chocolate, citrus, or florals develop from the bean’s origin, varietal, and processing method, and nothing is added at any point.
Co-fermented coffees, on the other hand, gain some of their flavor through the introduction of additional ingredients during fermentation. Fruits, spices, herbs, or specific yeast strains are added alongside the coffee cherries in a controlled environment, allowing those flavors to interact with the coffee before drying. This creates more pronounced, and sometimes more unexpected, flavor profiles.
Because of this difference, there’s also an important consideration for those with allergies. If you’re allergic to a specific ingredient, you can generally still enjoy coffees that list that flavor as a note (since nothing was added). However, with co-fermented coffees, the added ingredient was present during processing, so it’s best to avoid those if you have a related allergy.
Honoring Where We Come From
The Nicaragua Orange Co-Fermentation gives Klatch Coffee the opportunity to celebrate our founding family's Dutch roots through great coffee and intentional design. The orange burlap bag, the Dutch-inspired white-and-blue wrap, and the matching tumbler each tell a part of that story. The coffee inside brings it to life through its distinctive flavor and the work of the growers and producers who made it possible.
Ultimately, this coffee is a representation of both Klatch Coffee’s past, as well as its present and future. It represents all parts of our journey and how we’ve gotten to where we are today. As with any great coffee, the team at Klatch Coffee has enjoyed it in many formats. See below for our recipe recommendations, and grab a bag to try it for yourself today!
Extraordinary Coffee. Innovative Processing. A Partnership With Purpose.
At Klatch Coffee, we believe exceptional coffee begins with extraordinary people, innovative farming, and a passion for quality. That's why we're excited to share our partnership with Gold Mountain Coffee Growers, a pioneering group of Nicaraguan farmers dedicated to producing award-winning specialty coffees while fighting poverty, protecting the environment, and creating meaningful opportunities for farming communities.
Gold Mountain Coffee Growers approaches coffee cultivation with the precision of fine winemaking. From carefully monitoring cherry ripeness to experimenting with groundbreaking fermentation techniques, their commitment to quality has earned recognition through prestigious Good Food Awards and Golden Bean medals. Their coffees are a remarkable expression of Nicaragua's rich growing environment and the dedication of the people behind every harvest.
Finca Idealista: Where Nature Meets Innovation
Nestled in the mountainous landscapes of Nicaragua's Matagalpa region, Finca Idealista is Gold Mountain Coffee Growers' flagship demonstration farm and a center for specialty coffee innovation. Situated at approximately 1,200 meters above sea level, the farm benefits from mountainous terrain, a naturally cool microclimate, and the surrounding biodiversity of a protected rainforest ecosystem.
The farm borders Gold Mountain's private nature reserve, where towering trees provide natural shade and help regulate temperatures. This unique environment acts like a natural air conditioner, allowing coffee cherries to mature more slowly and develop greater sweetness, complexity, and depth of flavor. The surrounding forest also supports biodiversity, protects the watershed, and contributes to the ecological health of the growing region.
Finca Idealista is more than a coffee farm. It's a living laboratory for agricultural innovation. Its coffee museum and seed bank preserve and cultivate exceptional varieties, including Pacamara, Caturra, Bourbon, Pacas, and Pache, while providing valuable resources and education to neighboring farmers. Through ongoing experimentation with cultivation methods, fermentation, and processing, the team continues to discover exciting new possibilities for specialty coffee.
Orange Co-Fermentation: A Bold New Expression of Coffee
One of the most exciting examples of Finca Idealista's innovation is its Orange Co-Fermentation, an experimental process that brings together carefully selected coffee cherries and oranges grown on the farm itself.
This unique coffee undergoes a double anaerobic fermentation, during which whole coffee cherries ferment in oxygen-restricted environments alongside thousands of fresh oranges harvested at Finca Idealista. Inspired by techniques used in winemaking, this carefully controlled process encourages complex fermentation activity that develops extraordinary fruit-forward characteristics.
Gold Mountain's team closely monitors fermentation conditions, including sugar levels and acidity, to achieve an exceptional balance of sweetness, brightness, and complexity. Rather than allowing overpowering fermented flavors to dominate, the goal is to highlight the coffee's natural character while introducing exciting new layers of fruit expression.
Following fermentation, the whole cherries are slowly dried on raised beds for nearly 40 days. This extended drying period requires careful attention and consistent monitoring to ensure uniform drying and preserve the coffee's distinctive qualities.
The result is a truly unique sensory experience, with an expressive combination of vibrant citrus, juicy tropical fruit, delicate florals, and rich sweetness. The orange co-fermentation brings an exciting new dimension to the coffee, showcasing how innovative processing can transform the flavors found in every cup.
An Uncompromising Commitment to Quality
Quality begins long before processing. Gold Mountain Coffee Growers employs a dedicated ripeness team that works directly alongside farmers during harvest. Using sugar-measuring refractometers, similar to those used in vineyards, and specially designed ripeness guides, the team ensures cherries are selected at their optimal maturity.
Gold Mountain Coffee Growers' commitment to quality begins at harvest, when dedicated ripeness team members stay overnight on each participating farm throughout the picking season to ensure exceptional quality and complete traceability. Using specialized tools to measure cherry sugar content, they carefully oversee harvesting to ensure only optimally ripe cherries are selected. Once harvested, the coffee undergoes an extraordinarily meticulous sorting process, with imperfections removed before depulping, after fermentation, and throughout drying on more than 2,000 raised beds. Additional quality checks include density sorting, advanced optical light sensors, and careful hand sorting to ensure only the finest beans make the final selection. Licensed Q graders then individually cup and evaluate every component of each coffee before shipment to warehouses in the United States and Europe. This remarkable attention to detail allows every coffee to be traced back to its farm, including the sugar content of the cherries and even the weather conditions during harvest. It's this uncompromising dedication to precision, transparency, and craftsmanship that makes every cup truly exceptional.
This dedication to precision helps create coffees that are not only incredibly distinctive but also represent the hard work and craftsmanship of the farmers who produce them.
Protecting the Land That Makes Great Coffee Possible
At Finca Idealista, environmental stewardship is deeply connected to coffee quality. Gold Mountain Coffee Growers has implemented a range of innovative farming practices designed to protect the surrounding ecosystem and preserve natural resources.
Rainwater collection and recycling systems help conserve water, while volcanic filtration systems clean wastewater from coffee processing before it returns to the watershed. Coffee pulp is composted into natural fertilizer, supported by chickens that enrich the compost with nitrogen. The farm also uses machetes rather than glyphosate-based herbicides to manage weeds, helping protect soil health and prevent chemical runoff.
Beyond the farm, Gold Mountain has purchased rainforest land to protect endangered species and preserve biodiversity. Their commitment to environmental sustainability was recognized with the 2016 Specialty Coffee Association of Europe Excellence Award for Sustainability.
Great Coffee That Creates Lasting Change
What makes our partnership with Gold Mountain Coffee Growers especially meaningful is their belief that exceptional coffee can change lives.
Through their Direct Trade model, farmers connect directly with roasters, eliminating unnecessary middlemen and receiving higher prices for their hard work. These relationships help create opportunities for farmers to invest in their land, improve processing facilities, expand production, and provide greater financial security for their families.
Gold Mountain also reinvests in local communities through zero- and low-interest loans, clean water projects, educational programs for girls, improved school infrastructure, and access to agricultural resources. Their work demonstrates that producing outstanding specialty coffee and making a positive social impact can go hand in hand.
A Coffee Worth Discovering
We're incredibly excited to share this exceptional coffee and the story behind it. Our partnership with Gold Mountain Coffee Growers represents everything we love about specialty coffee: remarkable quality, adventurous innovation, meaningful relationships, and a shared commitment to doing good.
From the rainforest ecosystem surrounding Finca Idealista to the extraordinary Orange Co-Fermentation process, every detail contributes to a coffee unlike the ordinary.
