Most notably found in El Salvador, Orange Bourbon is celebrated for its exceptional sweetness and vibrant acidity. A masterpiece for true connoisseurs, this refined expression pushes the boundaries of what we thought possible from the varietal. In a bold experiment, Las Mercedes put these exceptional beans through an Anaerobic Process, unlocking flavors we’ve never experienced from Orange Bourbon before. And the results? The Ortiz family provides healthcare, food, and clothing to those in the community that are in need. Las Mercedes is committed to ecological care, making efforts to preserve natural wildlife, to maintain compliance with our certifications in the way that the mill’s by-products are disposed of, and to avoid contamination. In the last few years, the Ortiz family has prioritized preservation by planting native trees.

Anaerobic Natural Process

The most admired of the traditional varieties grown in Latin America is bourbon, our 'Orange Bourbon' is unique because of the orange coffee cherries, as opposed to red. We at Klatch Coffee were drawn to Las Mercedes because of its great coffee, but we found what we fell in love with was the people, the process, and our shared passion for persistently striving to make coffee the best it can be. The Las Mercedes process begins with hand picking only ripe, mature cherries, and then carefully screening them before depulping to eliminate twigs, leaves, and other foreign material.

After selecting picking we screen the coffee cherries we pour all the coffee cherries into our anaerobic barrels and we close the barrels. Water is not added, the anaerobic fermentation process takes 90 to 92 hrs. The coffee cherries are removed and replaced on raised beds to dry slowly for 35 to 40 days with an 11% of humidity. The coffee cherries are placed into yute bags and stored to rest. At the wet mill, the cherries are received into ceramic tiled ditches, washed with fresh collected rainwater, and immediately fed into a pulper. These pulpers are designed to separate the bean from the flesh of the fruit while leaving each bean intact in its parchment envelope. They then dry the coffee on clay patios to ensure even drying for 25 days.
